Blueberry Coffee Cake Recipe With Juicy Blueberries (Blueberry Crumb Cake)
This amazing blueberry streusel coffee cake recipe has a crunchy cinnamon streusel and a simple vanilla glaze on top, and it’s my family’s favorite thing to make every summer when we go blueberry picking.
When my kids were younger we lived in Maryland. Actually, all but one of my kids was born there! There was a cute family owned orchard and every single summer we would go blueberry picking. We would pick buckets and buckets of fresh blueberries and it’s still one of my very favorite memories from our time on the East Coast – all the fresh fruit orchards. One of the first things we wold make was always this blueberry coffee cake.
The number one thing I look for in coffee cake is that super thick, sweet, crumbly streusel topping. Oh my, that is the best part of a coffee cake! Right?! But my other favorite thing about coffee cake is that it’s perfectly acceptable to eat it for breakfast or dessert!
Ingredients Needed
Streusel Topping Ingredients
- Granulated Sugar
- Light Brown Sugar
- All-Purpose Flour
- Ground Cinnamon
- Butter – I use salted butter but unsalted butter can be used if that’s your preference.
Coffee Cake Batter Ingredients
- All-Purpose Flour
- Granulated Sugar
- Butter
- Whole Milk
- Large Egg
- Baking Powder
- Salt – I use kosher salt but sea salt and iodized table salt can be used as well.
- Fresh Blueberries
Vanilla Glaze Ingredients
- Powdered Sugar
- Whole Milk
- Vanilla Extract
How To Make A Delicious Blueberry Coffee Cake With Streusel Topping (Printable Recipe Card)
Heat the oven to 375 degrees F. Prepare a 9-inch springform pan and spray with nonstick cooking spray. Set aside.
Make The Streusel Topping : Combine all the streusel topping ingredients into a small mixing bowl. Use your clean hands, a fork, or a pastry blender to combine everything together until you have a thick crumb mixture. Set aside for later.
Make The Coffee Cake Batter : In a large bowl, add the flour, granulated sugar, softened butter, milk, egg, baking powder, and salt. Use an electric hand mixer to beat everything together until combined and forms a smooth batter.
Add the blueberries and very gently stir just until they are combined into the batter. You don’t want to mix too hard or else the fresh berries will burst and bleed into the batter.
Evenly spread the coffee cake batter into the prepared pan. Spread the streusel topping evenly over top the batter.
Bake for 55-65 minutes. The coffee cake will be puffed up and a toothpick inserted into the middle should come out with dry tender crumb on it. The edges of the cake will be golden brown and slightly pulled away from the pan. If the top is getting too browned then loosely lay a piece of foil over top the coffee cake for the last several minutes of the bake time.
Remove the coffee cake from the oven and allow it cool for 20 minutes at room temperature. Loosen the edges of the cake from the pan using a butter. knife and then unhook and remove the sides of the springform pan.
Make The Glaze : Combine all the glaze ingredients in a small bowl and mix together until desired consistency is reached. Add more or less, or more or less powdered sugar, to achieve a pourable consistency or a thicker more spreadable consistency.
Serve the coffee cake warm or let it cool to room temperature before serving.
How To Store Leftover Coffee Cake With A Glaze
Store leftover coffee cake at room temperature for best results. You can either leave it in the pan and cover it tightly with plastic wrap or foil, or remove individual slices to a storage container or airtight container and leave at room temperature.
Technically speaking, because of the little amount of milk in the glaze you should store it in the fridge – and you certainly can. I prefer storing it at room temperature to avoid the crumble topping from getting hard and not as buttery and soft. You could also replace the milk called for in the glaze recipe with evaporated milk to avoid storing the cake at room temperature with dairy milk in the glaze.
Recipe Tips
- Use Fresh Blueberries : I have only ever made this recipe with fresh blueberries. I don’t love baking with frozen berries in coffee cakes and cakes because they tend to bleed color if they thaw at all. But if you do use frozen blueberries, take them straight from the freezer into the batter to prevent color bleed.
- Can I Use A 9×13 Pan : Some readers have had success making this in a 9×13 baking dish. The cook time I would imagine would be less, so maybe set the timer for 35-40 minutes and just watch it closely.
- Baking Tip : The best way to check if it’s cooked all the way through is to poke a toothpick in the middle. If it comes out with wet batter then it needs to cook longer. If it comes out with slightly moist/dry crumbs then it’s good.
- Glaze & Garnish : The glaze really is so yummy! You don’t have to garnish with fresh blueberries, but the glaze really is not something you should leave off. If you love the lemon + blueberry combo then try adding some fresh lemon zest on top of the finished coffee cake. You could also add some fresh lemon juice in with the glaze ingredients as well.
