Buddy The Elf Cookies

Buddy The Elf Cookies are the perfect holiday treat to make for movie night. Based off of the infamous elf’s breakfast spaghetti – loaded with crunch, sweet white chocolate, maple, milk chocolate, marshmallows, and m&m’s. Make this no bake cookie recipe inspired by everyone’s favorite Christmastime movie, Elf!

These no bake elf cookies are based off of the Elf movie when he makes his infamous Elf’s breakfast spaghetti. Don’t worry, you’ll hit all the main food groups (according the elf) with this fun recipe😉

​Loaded with Elf’s favorite candy and junk food – like white chocolate, milk chocolate, colorful m&m’s, marshmallows, maple, and crunchy chow mien noodles. If you’re wanting a fun cookie to take to the cookie exchanges this holiday season, then these are it!

Ingredients Needed

  1. White Chocolate Almond Bark : This is also labeled as vanilla almond bark in the stores. You can find it near the chocolate chips and chocolate baking bars in the baking aisle. 
  2. Maple Extract : This is optional but if you want the true “breakfast cereal” that Buddy The Elf makes in the movie, then you’ll want to add it in. But if you don’t love maple flavor, then simply omit it from the recipe and the cookies will still be delicious. 
  3. Chow Mein Noodles
  4. Chocolate Almond Bark
  5. Mini M&M’s
  6. Mini Marshmallow Bits : If you can’t find the bits (I usually can always find them on Amazon) then mini marshmallows will work. If you want them smaller, similar to the bits, cut the mini marshmallows into 3-4 smaller pieces with kitchen scissors.

How To Make No Bake Elf Cookies (From The Movie Elf)

Line a large baking sheet with parchment paper, wax paper, or a silicone baking mat. Set aside. 

Add the white almond bark into a microwave-safe bowl and heat according to the package directions. It usually says to heat for 1 minute and then stir well; continue heating in 15-second increments, stirring after each, until it’s completely smooth and melted. 

Stir in the maple extract if using. 

Add the chow mien noodle into a large bowl. Pour the melted white almond bark over the chow mien noodles and stir until all the noodles are thoroughly coated. 

Use a medium cookie scoop (2 tablespoons) to scoop the mixture onto the prepared baking sheet. Shape them into small mounds to form 15 cookies on the lined baking sheet. 

In a separate smaller microwave-safe bowl, add the chocolate almond bark and melt for about 45-60 seconds or until it’s completely smooth and melted.

Place the melted chocolate into a piping bag, a ziplock bag with he corner snipped off, or use a fork to drizzle it over each cookie in a zig-zag pattern or random pattern. 

Immediately sprinkle the cookies with mini m&m’s and mini marshmallow bits. Gently press the toppings into the melted chocolate so they stick. 

Place the cookies in the refrigerator for about 20 minutes to allow the chocolate to set. You can also leave them at room temperature for about 1 hour to allow the chocolate to set.

​How To Store Leftover Buddy The Elf Cookies

Store in an airtight container, at room temperature, for up to 5 days.

My Tips For Success

  • Mix some sprinkles (the larger sized ones, not the ball shaped non-pareils) into the chow mein mixture for a fun addition, and to make these cookies even more festive and colorful with Christmas colors. 
  • Add some non-pareils sprinkles over top the cookies alongside the m&m’s and marshmallow bits. If decorating the tops of the cookies with sprinkles, I suggest using the smaller ball-shaped nonpareils. 
  • Use fresh, crispy chow mein noodles for the best crunchy texture. If the noodles have been opened for awhile, they may not be as crunchy in this recipe and will loose any crunch they have fairly quickly once combined with the melted chocolate. 
  • The maple adds just a subtle flavor. I don’t recommend using anymore than 1/4 teaspoon, as adding too much into the melted chocolate can cause it to seize and clump once mixed in. 
  • Use the Christmas mix of mini m&m’s instead of the colorful mini m&m’s! This is something that I usually do when making them. 
  • Instead of melted chocolate almond bark try using melted butterscotch chips, melted peanut butter chips, or candy melts in whatever color you want.

Notes

Add Sprinkles : Mix some sprinkles (the larger sized ones, not the ball shaped non-pareils) into the chow mein mixture for a fun addition. You can also add some sprinkles to the tops of the cookies along with the m&m’s and marshmallows. You can use the small ball shaped sprinkles (also called nonpareils) on the tops of the cookies if wanted (the nonpareils tend to bleed color when mixed into something, which is why I don’t suggest using them inside the chow mein mixture. 
Mini M&M’s : For a festive red and green touch use the Christmas mix mini m&m’s. 
Melted Chocolate : You can use melted butterscotch chips, melted peanut butter chips or colored candy melts to drizzle over top of the cookies instead of the melted chocolate almond bark. 
Mini Marshmallow Bits : These are harder to find in some stores. If you can’t find them, I usually have good luck getting them on amazon. You can also use kitchen scissors to cut mini marshmallows into small pieces and use those instead of the mini marshmallow bits.
