Cosmic Cookies (Copycat Crumbl Cosmic Brownie Cookies)
Cosmic cookies are fudgy brownie cookies with rich chocolate flavor, topped with chocolate frosting and finished off with rainbow chips for that classic look of the iconic Little Debbie Cosmic Brownies.
If you’ve had this cookie at Crumbl Cookies then you’ll love this homemade version of it – tastes just like it! Homemade decadent chocolate cookies, a semi-sweet chocolate ganache frosting, and of course finished with candy sprinkles in rainbow colors that will remind you of the nostalgic treat.
Ingredients Needed
- All-Purpose Flour
- Unsweetened Cocoa Powder
- Cornstarch : The “secret” ingredient to soft, thick, and puffy cookies.
- Baking Soda
- Kosher Salt
- Butter : You can use salted butter or unsalted butter; whichever you prefer baking with. I always use salted butter for everything.
- Light Brown Sugar
- Granulated Sugar
- Large Egg + Large Egg Yolk : Discard the one egg white as you will only use the egg yolk.
- Vanilla Extract
- Semi-Sweet Chocolate Chips
- Heavy Cream : No substitutes for this one! You need the thickness and fat to help the ganache set and thicken nicely.
- Rainbow Chip Sprinkles : You can find these in the baking aisle with the other sprinkles, sometimes they’re also by the ice cream sundae toppings, and you can also find them in the cake decorating aisle at craft stores as well.
How To Make Cosmic Cookies (Printable Recipe Card)
In a small bowl, whisk together the all-purpose flour, cocoa powder, cornstarch, baking soda, and salt. Set aside.
In a large mixing bowl using an electric hand mixer, or use the bowl of a stand mixer with the paddle attachment, cream together the butter, light brown sugar, and sugar until smooth, fluffy, and lighter in color. At least 2-3 minutes beaten on medium-high speed.
Add in the egg, egg yolk, and vanilla extract. Beat until thoroughly combined.
Gradually add the dry ingredients (from the smaller bowl) into the wet ingredients, beating on low speed just until combined and a soft dough is formed. Gather the dough into a ball and wrap it in plastic wrap. Place the wrapped dough ball in the refrigerator to chill for at least 1 hour or up to overnight.
Once the dough has chilled, preheat the oven to 350 degrees F. Prepare two baking sheets by lining with parchment paper or a silicone baking mat.
Use a 2 tablespoon cookie scoop (medium cookie scoop) to portion out the dough and roll it into a dough ball. Place 12 cookie dough balls per prepared cookie sheet.
Bake for 12-15 minutes or until the edges are firm and the centers appear just slightly underdone. Remove the cookies from the oven and allow them to cool on the cookie sheet for about 10 minutes before moving them to a wire rack to finish cooling completely.
Once the cookies are cooled to room temperature, place the semi-sweet chocolate chips and heavy cream into a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until the chocolate is completely melted and smooth.
Gently spread the melted chocolate ganache on top of each cookie with an offset spatula or spoon. Sprinkle each cookie with some rainbow chip sprinkles. Let the ganache set and cool for about 20 minutes before enjoying a cookie.
How To Store Leftover Cosmic Brownie Cookies
Store the cookies inside an airtight container, at room temperature, for up to 5 days. If you are stacking the cookies, make sure to place pieces of parchment paper, wax paper, or foil in between each layer to avoid any sticking and to not damage the ganache topping.
Where Can I Find Rainbow Chip Sprinkles?
The rainbow chip sprinkles can be found in the baking aisle with the other sprinkles, by the ice cream sundae toppings, or look in the candy decorating aisle at a store like Walmart. The rainbow candy sprinkles are larger chunks of candy sprinkles that more closely resemble the same sprinkle on the cosmic brownies.
Can I Use Different Toppings Instead of Rainbow Candy Sprinkles?
Yes! If you can’t find the rainbow chip sprinkles or don’t want to use them, there are lots of other options. Here are a few ideas to get you started.
- Chopped Nuts : Try topping the cookies with finely chopped pecans, walnuts, or almonds for a salty crunchy texture.
- Mini Chocolate Chips
- White Chocolate, Milk Chocolate, and/or Dark Chocolate Curls : Get some chocolate bars and use a vegetable peeler to make chocolate curls from the long edge of the chocolate bar.
- Chocolate Sprinkles
- Rainbow Sprinkles : Instead of the rainbow candy sprinkles use rainbow sprinkles either in the small ball shape or the longer tube shaped sprinkles.
